What is a Truffle?


The Truffle is a spontaneous mushroom, which unlike its peers grows underground rather than on the surface. It draws nourishment from the roots of plants, with which it creates a symbiotic relationship. The Truffle binds to the root system of
the plant, generating what are scientifically called mycorrhizae. The symbiosis brings benefits to both, both the plant and the truffle.

Why is the truffle called that?


The etymology of the word truffle is controversial. The most accredited theory predicts that the term derives from the Latin terms terrae tufer (and from the evolution into vernacular territùfru). This phrase means “excrescence of the earth”.

There are numerous species of truffles, not all of which are eatable. There are only 6 available on the markets.

Their story


The long love story between man and truffles began a very long time ago. According to historians, almost 5,000 years ago.
The first to bring truffles to the table, according to recent historiographical sources, were the Babylonians first and the Sumerians later. We can therefore date the discovery of this prized underground mushroom and its contextual use in cooking to 3,000 BC.
For a long time, naturalists disagreed on the classification of the truffle. Some defined it as a plant, others as an excrescence of the ground, or even as an animal! Regardless of beliefs, however, the truffle always remained a highly appreciated food, especially on the tables of nobles and high prelates. But the truffle also suggested totally different concepts. For some "scientists" of the time, its aroma was a sort of "quintessence" that caused an ecstatic effect on the human being. The truffle therefore as a sublime synthesis of the satisfaction of the senses to represent the essence of a superior pleasure.

The Search


To "find" a truffle, the hunter or "trifolao" must avail himself of the collaboration of a dog with a very fine nose and trained to recognize the aroma of this mushroom. There are collection calendars referring to the different species of Tuber and which vary for each region in which truffles can be found. In the woods when the dog smells the truffle it indicates it to the hunter who with a special hoe extracts it with the utmost delicacy.
